African Gateau

18 egg yolks
12 egg whites, whisk until foamy
375 gr powdered sugar
175 gr cake flour
300 gr butter, softened
75 gr cacao powder
1 tsp vanilla essence
1 tbs rhum
Simple syrup :
75 gr gula + 125 cc air
Vla : 700cc susu + 140 gr gula + 90 gr maizena + 6 kuning
telur + 1,5 sdm rhum + 1 sdm butter + 2 kaleng jeruk mandarine
Method :
1.
Whipped the egg yolks and sugar until white and
pale. Add in flour and fold the egg white. Divide into 3 equal parts.
Custard :
2 egg yolks

50 gr corn starch
2 C milk
1 tsp vanilla essence
1 tbs butter
NCC, 4@D 20cm, T 4cm

Gula secukupnya
1 sdm butter
